Recipe Roundup: Summer Edition

It’s been a hot one this summer, especially if you’re living here in sunny Florida. We’ve got a few ideas to beat the heat with some yummy and healthy treats.

BBQ Favorites

Having a summer BBQ with friends and family? Try making these few changes to cut down on carbs.

Go breadless by making colorful skewers. Pick a meat like steak or chicken, then alternate with your favorite veggies like onions or peppers. Cook to perfection.

Don’t forget the sides! Try skipping macaroni salad for coleslaw. And trade potato salad for some nice baked beans. Add some corn on the cob to the grill and enjoy its juicy sweetness. A vibrant salad will add to the party with your favorite greens and veggies.

Fruit Fun

Finish the evening off with some fresh fruit for dessert. They are a refreshing cool treat and also a great way to get vitamins and minerals. Let’s look at a few way to make them more fun:

        Smoothies. Throw some of your favorite fruits in the blender, add in some yogurt, fruit juice and some ice cubes. Blend to enjoy a sweet summer treat.

        Fruit kebabs. Have friends coming over? Display your fruit BBQ style on skewers. Alternate fruits to make colorful patterns. Then you have a nice presentation and a delicious snack.

        Popsicles. Cut up some of your favorite fruits: berries, melons, etc. and put them in a popsicle mold with coconut water or your favorite fruit juice and freeze. When they’re done, you’ll have a frozen delight.

        Infused Water. Pick your favorite fruits or vegetables like berries, citrus or cucumbers and add them into a glass jar full of water. Set the jars in the fridge overnight and enjoy the next day. It’s a great way to stay hydrated while also getting in those fruits and veggies.
